Eggs is a very common food that we consume almost every day. For those who love to cook, how do you keep your eggs fresh? How do you boil nice and neat hard-boiled eggs? Today, I’m going share some tips on cooking with eggs.



Keeping Eggs Fresh

  1. Keep refrigerated. To main its freshness and quality, store fresh eggs in a very cool place or in the refrigerator, at around 0°C (Celsius Degree). Keep the eggs tightly covered to prevent dehydration.
  2. Keep dry. There is a protective film on shells that helps to keep eggs fresh. Rinsing destroys the protective film and allows bacteria to penetrate the shells and contaminate the eggs. So, rinse the eggs just before using them.
  3. Keep in clean places. Keep eggs in clean and well-ventilated places to minimize the risk of cross-contamination and absorption of foreign odors. Bacteria, which penetrate the shells easily and contaminate the eggs within, can affect the freshness or make them unsafe for consumption.
  4. Handle with care. Eggs shells are very fragile and cannot withstand rough handling. So, remember to handle with care when handling or packaging eggs.
  5. Storing time. Eggs cannot keep fresh indefinitely, even in the refrigerator or in ideal room conditions. Eggs kept at room temperature are prone to contamination by bacteria, which proliferate when there is a drastic change in temperature and humidity. The maximum storage time, depending on the freshness of eggs when bought, is three weeks.


Boiling Eggs

  1. Prevent shells from cracking. Allow refrigerated eggs to thaw before putting them in boiling water. Another alternative is to add eggs into cold water and boil together.
  2. Seal cracks in shells. Add a little vinegar or salt to the water. This helps thewhites to set faster, which effectively seals the cracks, if any, and prevent more whites from seeping out.
  3. Center yolks. When boiling eggs, keep stirring the water to keep the eggs moving. Stirring positions the yolk in the center, which is aesthetically more pleasing than lopsided egg yolks.
  4. Tender soft-boiled eggs with runny yolks. Put the eggs into cold water then boil over moderate heat. Turn off the heat, leave the eggs to chill for 5 minutes then rinse quickly with cold water.
  5. Easy shelling. Wait for hard-boiled eggs to cool completely before shelling them. Crack the shells and then soak the eggs in tap water helps to loosen the shells, making them easier to shell.
